WHAT’S FOR BREAKFAST?

Is usually the first question on my mind when I get up.  If you’re anything like me, weekday mornings are hectic. After hitting snooze for about 30 mins, managing to get my act together and get ready for work, preparing breakfast is usually the last thing on my mind. I have some quick, easy, vegan and gluten-free breakfast options that you can grab and go with minimal preparation. Even better they are easy to transport and eat at the office. Enjoy!

  • Almond Butter and Banana – one of my favorite quick meals for breakfast or an afternoon snack. I love the individual Justin’s almond butter packets, they have different flavors and are great for throwing in your purse and eating on the go. The banana is an excellent source of potassium and the almond butter is a great source of protein to keep you full and satisfied.

  • Amy’s Tofu Breakfast Wrap Scramble – I’m a HUGE fan of all of Amy’s food products. She has tons of dairy free, gluten-free options that are quick, easy, and delicious. Even better her items are found at most large grocery store chains, no need to make the additional stop at Whole Foods. If you’re a bit more hungry this Tofu Breakfast Wrap Scramble is delicious and very filling. It’s made of all organic ingredients (tofu, hashbrowns, and vegetables), no trans fats/MSG/preservatives, it’s vegan, soy, corn and gluten-free. I love to add some avocado and salsa, so delicious!

  • Perfect Fit Protein Bar – I’m a big fan of Tone It Up’s Perfect Fit Protein Powder (it’s organic, vegan, and raw). They recently developed a Perfect Fit Protein Bar that’s chocolate flavor and absolutely delicious! It’s organic, gluten-free, dairy free, and contains 7 grams of protein. This is a great way to start your day.

  • Yogurt – My absolute favorite dairy free yogurt is So Delicious Coconut Yogurt. It’s heavenly! I try to avoid dairy as much as I can and finding a delicious yogurt (one of my favorite breakfast meals) is not easy. The So Delicious Coconut Yogurt comes in a variety of flavors (blueberry, strawberry, chocolate), my favorite is plain. I love mixing in nuts and seeds (almonds, cashews, sunflower seeds, etc.,) – adding protein to yogurt helps to balance your blood sugar levels and keep you nice and full. I also like to top it off with a dash of cinnamon which has numerous health benefits, such as regulating blood sugar level and reducing cholesterol levels. You can find this yogurt at your local Whole Foods or Sprouts.

  • Power Smoothie – I have tons of different types of smoothies I like to make for breakfast, one of my current favorites is my blueberry power smoothie (such an original name, I know). This smoothie has tons of protein, fiber, antioxidants (found in the hemp and chia seeds), and potassium. This is one of my favorite ways to start my day.

I’m not one to follow exact measurements when cooking, so just add enough of each ingredient to your liking (keep in mind it’s easier to add more than take out excess).   To cut the prep time in the morning add most of the ingredients into your blender the night before (all but the ice and frozen blueberries) and in the morning just add the frozen items.
